C&G 7132-07 NVQ Diploma Professional Cookery (Level 2)

Overview

Level 2 is a continuation of the level 1 qualification. This will reinforce and develop skills in food preparation and cooking for customers within the College's Apple Tree restaurant with a view to progressing on to level 3.

Am I Ready?

Level 1 Diploma in Introduction to Professional Cookery or equivalent and successful completion of a skills test.

Course Details

This qualification builds on the skill and knowledge acquired at Level 1 and prepares candidates for employment or further study. Topics covered in this course include:

  • Prepare & cook food by a variety of cooking methods
  • Produce various patisserie products
  • Investigate the catering industry
  • Food safety in catering
  • Health & Safety in catering
  • Healthier foods & special diets in catering
  • Catering operations
  • Costs & menu planning
  • Applying workplace skills
Assessment

Each unit is assessed by a combination of externally set assessments and multiple choice tests. Craft units are assessed by a series of practical assessments covering the range of different commodities.

Fees & Funding

Sixteen / Eighteen

Full Time Further Education courses are free to school leavers and those who are under 19 on 31 August of the year they start their course. Exam resit fees may apply as applicable.</p.

Level 2 / Level 3

Students enrolling onto their first full Level 2 or Level 3 course or below who are aged between 19 and 23 may be able to enrol for free. This is a government initiative and the course offer is subject to change. Low Income / Unemployed Seeking Work

Students that are unemployed and currently seeking work, or on a low income of up to £20,319 per annum may be able to enrol to a course at Level 2 or below free of charge. This is a government initiative and the course offer is subject to change. Additional Information

All students are expected to work towards a grade C GCSE in maths & English.
